Mediterranean Quinoa Salad
Serves 2 · Recipe from VA (VHA Nutrition and Food Services) · Original recipe
Ingredients
½ cup uncooked quinoa, rinsed
1 cup water
½ medium cucumber, chopped (about ½ cup)
¼ cup chopped roasted red pepper or ½ cup halved cherry or grape tomatoes
¼ cup kalamata olives, pitted and chopped
½ cup chopped fresh parsley
¼ cup crumbled feta
[Dressing]
1 tablespoon extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons lemon juice (about ½ lemon)
1 teaspoon Dijon mustard or brown mustard
Steps
Add the quinoa and water to a medium saucepan.
Bring to a boil, then reduce heat to maintain a simmer. Cook until the quinoa is tender, about 10-15 minutes.
Remove the pan from the heat. Fluff the cooked quinoa with a fork and let sit to cool. You can speed up this process by spreading it on a baking sheet and putting it in the refrigerator.
In a medium mixing bowl, make the dressing by whisking together the olive oil, vinegar, lemon juice, and mustard.
Add the cooked and cooled quinoa, along with the cucumber, red peppers or tomatoes, olives, parsley, and feta. Toss gently to combine.
Serve immediately, or chill before serving if desired, up to 5 days.

Grilled Tuna With Chickpea and Spinach Salad
Serves 4 · Recipe from NHLBI (NIH) (Deliciously Healthy Dinners) · Original recipe
Ingredients
1 Tbsp olive or canola oil
1 Tbsp garlic, minced (about 2–3 cloves)
2 Tbsp lemon juice
1 Tbsp oregano, minced (or 1 tsp dried)
12 oz tuna steak, cut into 4 portions (3 oz each)
[For salad:]
½ can (15½ oz) low-sodium chickpeas (or garbanzo beans), drained and rinsed
½ bag (10 oz) leaf spinach, rinsed and dried
1 Tbsp lemon juice
1 medium tomato, rinsed and cut into wedges
⅛ tsp salt
⅛ tsp ground black pepper
Steps
Preheat grill pan or oven broiler (with the rack 3 inches from heat source) on high temperature.
Combine oil, garlic, lemon juice, and oregano, and brush over tuna steaks. Marinate for 5–10 minutes.
Meanwhile, combine all salad ingredients. (Salad can be made up to 2 hours in advance and refrigerated.)
Grill or broil tuna on high heat for 3–4 minutes on each side until the flesh is opaque and separates easily with a fork (to a minimum internal temperature of 145 °F).
In a small bowl, whisk together the sour cream, parsley, and hot sauce or chili oil. Set in the refrigerator to chill.
In a separate small bowl, stir together the salt and pepper.
Pat the chicken dry with paper towels, then sprinkle evenly with the salt-pepper mixture.
Heat a tagine, a Dutch oven, or a large stockpot over medium-high heat.
Add the oil and heat until shimmering.
Place the chicken in the pan and cook until golden-brown but not cooked through, about 3-5 minutes on each side. Transfer the chicken to a plate and set aside.
Reduce the heat to medium, then add the onion and cook until softened, about 5-7 minutes. Add the garlic and allspice. Cook until fragrant, about 1-2 minutes.
Add the beans, tomatoes with their juice, apricots, and cinnamon. Bring to a simmer over medium-high heat, then reduce the heat to maintain a gentle simmer.
Return the browned chicken to the pan and cover with a lid, Cook until the chicken is cooked through (internal temperature of 175°F), about 33-35 minutes.
Serve warm, with a heaping tablespoon of the sour cream mixture on top of each portion.
Place the beet pieces on a baking sheet and toss with ½ tablespoon of the oil. Place in the oven and roast until fork-tender, about 30-40 minutes.
Meanwhile add the garlic and 2 tablespoons of the lemon juice to a small bowl and stir to combine. Set aside.
Add ¼ cup of the roasted beet to a food processor. Pulse until broken down into small pieces.
Add the garlic-lemon juice mixture, ½ teaspoon lemon zest, beans, tahini, salt, and black pepper. Puree the mixture until very smooth, while slowly drizzling in the remaining 3½ tablespoons of oil, about 3-4 minutes.
Finely chop the remaining roasted beet. Add to a small bowl and toss with any remaining lemon zest and 1 tablespoon lemon juice. Set aside.
Transfer the pureed mixture to a serving dish and garnish with the chopped beet and lemon mixture.
Serve right away, or store in an air-tight container in the refrigerator for up to 7 days. May be frozen if desired.

Garden-Fresh Gazpacho
Serves 4 · Recipe from VA (VHA Nutrition and Food Services) · Original recipe
Ingredients
1½ pounds ripe medium tomatoes (about 6-10 tomatoes, depending on variety)
1 (5.5-ounce) can tomato juice, added as needed
1 medium cucumber, peeled, seeded, and finely chopped (about 1 cup)
1 medium red bell pepper, finely chopped (about 1 cup)
½ cup finely chopped onion
1 jalapeño, seeds and membranes removed, minced
1-2 garlic cloves, minced (about 1 teaspoon)
1 lime, juiced (about 2 tablespoons juice)
1 tablespoon balsamic vinegar
1 tablespoon lite (reduced-sodium) soy sauce
½ teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup extra-virgin olive oil
¼ cup sliced fresh basil leaves
Steps
Fill a large pot or saucepan halfway full with water. Set over high heat and bring to a boil.
Meanwhile, prepare a large bowl with ice water and make an X cut with a paring knife on the bottom of each tomato.
Carefully drop the tomatoes into the boiling water and cook for 15 seconds, then remove and transfer to the ice water.
Let tomatoes cool until able to handle, about 1 minute, then remove from the ice water and pat dry.
Peel and seed the tomatoes. To seed the tomatoes, place them in a fine mesh strainer set over a large mixing bowl. Press as much of the juice and pulp through as possible.
Transfer the collected juice and pulp to a liquid measuring cup. Add canned tomato juice to bring the total to 1 cup.
Transfer the tomatoes and juice back to the bowl. Add the cucumber, bell pepper, onion, jalapeño, garlic, lime juice, vinegar, soy sauce or tamari, cumin, salt, and black pepper. Stir to combine.
Transfer 1½ cups of the mixture to a blender and add the olive oil. Blend on high speed until smooth and creamy, about 20-30 seconds.
Return the pureed mixture to the bowl and stir to combine.
Cover and chill for at least 2 hours, up to overnight.
